Ok, I had to stare for a moment before I got it, but the guy to the far left is missing the tip top of his head in one configuration and not in the other whereas all other characters have a top and bottom in both configurations.

Right, the man missing his head is one of two anomolies which make this illusion work. The other is the woman near the middle on the top row. When man #1 is missing his head, you'll see the woman in the black vest slip into a spot that contains no feet on the bottom half. She accounts for the 2nd person.

Let's see, a cow with no legs would be "Ground Beef." And one with 3 legs would be "Lean Beef."
