King Ranch Chicken

Mrs. Isaac makes this and it is a family recipe. She can do some baking and makes a great Christmas dinner.

Ingredients:
10 3/4 ounces can cream of Mushroom soup
10 3/4 ounces can cream of Chicken soup
10 ounces can diced tomatoes with green chilies
1/2 cup chicken broth
2 cups diced chicken; precooked
12 corn tortillas, broken to fit pan
1/2 cup chopped onion
2 cups shredded cheddar cheese


Directions:

Preheat oven to 350F. Lightly mist 9x13"casserole dish with non- stick cooking spray. Blend soup, tomatoes and chicken broth together until smooth.

Layer half of chicken, tortillas, onion, cheese and soup mixture. Repeat layers ending with the grated cheese. Bake 1 hour, uncovered.

This recipe for King Ranch Casserole serves/makes 6

I make this to but instead of the broken tortillas I use crushed Ranch Doritos! Yummy!!!!!!

Girls love Tex-Mex ! So what is your best baked dish ?

I have two baked dishes my kids love.

First one, Pepperoni Pasta Bake. The next would be my Crock Pot Roast. Here is the recipe for that:

1 pkg. Ranch Dressing (the dry kind!)
1 pkg. Italian Dressing
1 pkg. Brown gravy mix
1 Roast of your choice.
1 c. water.

Brown the roast in a hot pan. Transfer into your crock pot. Empty all three packages over the roast. Pour the cup of water into the pot with the roast. Let simmer all day! Usually about mid day or so I will put in some potatoes and carrots. This makes the best gravy and best tasting roast you'll ever have. Enjoy!
