joepole, I know a sushi chef in town and I asked him if his supplier was local (such as farmers seafood) and he replied "negative". However I think the chefs all know each other, and your statement may well be true for all I know.

I think that Shogun Bossier, Sushi-Ko, and Ichiban are all pretty good compared to the rest.

LOL, I've never had bluefin toro in my life, but I hope to someday... :D

As for Sushi-ko, I liked the nigirizushi. I hear they fly some of their fish in. When I went (just once) the tuna was a darker Ahi rather than a bright red yellow fin and it was good. But I did not like one of their fancy items called a "spicy tuna thing". I thought I liked anything with spicy tuna but I was wrong.

I wouldn't eat sushi from a non-local supplier. No restaurants around here do enough business to warrant daily trucks from anywhere out of town.

I don't think any restaurants received daily deliveries of fresh fish. I could be wrong but I think it is more like 2 or 3 deliveries per week. The trucks travel throughout a regional area (Dallas, East TX, NW LA, etc.)

Not sure that I would trust Gus Majalis for my sushi... :D

I'm waiting til August because it's my birthday and I want to go get some on my birthday. I've never been to a sushi bar and my main concern is the cost. If I was going to be able to afford this every once in a blue moon i'd rather do it on a special occasion, like my birthday.
